Greetings, /r/coffee! Long time lurker, first time poster.
I'm a working barista that just came into a very used Nuova Simonelli Mac 2000 V two group machine. Aside from pulling a good shot at work, I know nothing about the actual mechanics, maintenance, and setup of a commercial grade machine. I'm looking for some general information for complete noobs on how to go about repairing and getting my new baby in good shape. I've done some searching around and I can't find much info on my particular machine and what I do find is usually about 5 years out of date.
The machine was used for several years commercially and was placed in storage (haphazardly) about 3 years ago. It was working when it was moved to the basement of the coffee shop I work in now. It has apparently been sitting on its side this whole time which includes the last 3 Pittsburgh winters and summers. The building is climate controlled 7 days a week, but I'm not sure how well the basement maintains a steady temperature.
